@Jizzcliner this! When I first starting working in coffee I was so surprised at how much variety there is. everything from the roast to the growing region to the preparation method affects taste. I like to use latin american beans for my cold brew because of the one's I've tried, they tend to be a little heavier and less bright & fruity than afican coffees.
Oh--another thing to try: to make the concentrate a little heavier and darker, try using some regular coffee beans and some roasted for espresso. I use a 3-to-1ish ratio, but trial and error is part of the fun, I think.
@frigwiggin yep! grind the beans yourself, especially because the pre-ground stuff is likely too fine for cold brewing & french press. you want a pretty coarse grind setting when you cold brew.
