I had Welsh rarebit proper for the first time last year and it blew my fucking mind.
@fondue with cheddar I made Welsh rarebit for the first time last year, and I have no idea if it was authentic or not, but it was cheese and beer and I think mustard, which made it essentially cheese fondue, which is both your username and one of my favorite things.
@SarcasticFringehead Who cares, it sounds delicious! Cheese fondue is one of my favorite things, too! My username is much more than a movie reference, for sure.
What is it about beer/cheese or wine/cheese combinations that makes them so delectable? THEY ARE MAGIC.

For the longest time (like, my entire life until six months ago), I believed this dish actually involved rabbit. The reality sounds much better.
Ugh, can't watch the video at work, but from what I'm reading - this is basically a meal of fondued cheese on bread? Isn't that called manna?

This post inspired me to eat cheese on toast for dinner, but I didn't do anything to make it fancy or fondued. It was still delicious and I got to drink the beer separately.
I just had a terrible memory of my roommate eating meals of just mayonnaise and cheese on Ryvita.
@meetapossum I used to get sandwiches with mayo and American cheese in grade school and they still make me nostalgic, but not on Ryvita, thank you very much!
I never knew what Welsh rarebit actually was until now! They would make it all the time in the Betsy-Tacy books and I was always confused. They would make it for snack-type occasions, but I always thought it was some complicated meat roast.
Make drunken Templeton Strong rarebit instead. It uses ingredients you probably have in your kitchen and is a perfect complement to an evening (or afternoon) of boozing. You will need (all ingredients are per person):
Two English muffins
Four--six slices of Swiss cheese
1/2 beefsteak tomato
Preheat oven to 350, 400 degrees, whatever, your guests are as drunk as you are hopefully, or get a toaster oven going.
Separate all the English muffins and place them face up on something that resembles a grill pan or a pizza platter. On each half of the English muffins place a slice or two of Swiss cheese.
Take out a good knife, if you remember where it is, and try to slice beefsteak tomatoes into 1/4"- to 1/2-inch slices and try to make each slice about the same diameter as the English muffin base. 1/4-inch is best. Pat the tomato slices dry. Layer one slice each onto the cheese-laden English muffin halfsies.
Whoops! Is that the oven? Put the Swiss cheese/tomato/English muffin open-face sandwiches in there for, oh, I don't know, ten minutes. Depends on how hungry your guests are. After about ten minutes you have a warm and surprisingly juicy (and vegetarian!) snack you can serve your guests while you try to figure out who switched the Pandora over to "Smooth Jazz" and try to wrestle one of your oldest friend's iPhones out of the mouth of your sneaky hound. Not that I would have any personal experience of any of this, of course. Just a thought experiment.
@George Templeton Strong ETA portion size assumes your guests are ravenous and it was one of those "I guess they'll have lunch when we get there?" 2 PM parties or something that kicked off around 8 PM and the hors d'oeuvres ran out.
