If it were possible to dissolve into the internet like The Little Mermaid dissolves into sea foam, a good option today would be Serious Eats' end-of-summer cocktail slideshow. I am a drift of peach-champagne foam, and I have no thoughts or concerns.

Euchh. Maybe it's just me, but the fig one sounds repulsive. Figs? Fine. Vinegar and maple syrup in a "summer" beverage? That makes my stomach turn.
I do love a bellini, though.
@olivebee I had a bellini for the first time a couple weeks ago! I now regret every time I could have ordered one and didn't.

@olivebee I don't know about the figs, but apple cider vinegar and maple syrup (or honey, brown sugar, etc.) is actually a good combo. Add ginger and you have switchel, aka haymaker's punch. It's old-school Vermont gatorade, basically.
@SarahP I definitely think I would try it if you removed the balsamic vinegar and made it a hot winter drink. That's the only way I could tolerate drinking maple syrup. But then again, in the wintertime I will always choose hot spiced cider with dark rum.

@olivebee That could be like a Shrub, which is vinegar based, but also kind of hard on the palate.

The cantaloupe Pimm's is right.
My new favorite cocktail is a Dark and Stormy made with homemade ginger beer. I bought rum with an octopus on the label for it and so far it's been a great decision.
@VDRE The octopus worked on me as well; they always do.
